WHAT IS A PHIN FILTER?

Vietnamese coffee is known for its unique and bold flavour, thanks in part to its brewing method using a traditional Vietnamese filter called a "phin." You might have seen ANNEES extra large Phins in our stores, but if you're not familiar with this brewing technique, read on to learn all about the phin filter and how it's used to make delicious Vietnamese coffee.

What is a Phin Filter?

A phin filter is a simple yet effective coffee brewing tool that's commonly used in Vietnam. It consists of three main parts: a brewing chamber, filter plate and a lid. The filter sits in the brewing chamber and acts as a filter, allowing water to pass through while trapping coffee grounds. The brewing chamber is usually made of metal, and the lid fits snugly on top of it.

How to use a Phin Filter

To use a phin filter, you'll need ground coffee, (we recommend ANNEES Blend) hot water, and your choice of coffee cup to catch the brewed coffee. Here's our How To Brew Guide:

  • Grab your favourite coffee glass or mug!

  • Sit your ANNEES®  brewing chamber on top

  • Add 2-4 tablespoons of ANNEES® coffee blend (4 recommended to pack a punch!)

  • Level out the coffee in the brewing chamber by slightly shaking

  • Take the filter plate and gently screw this down on the coffee

  • With hot water (90℃ ideally) pour around 15ml on top of the filter press - this is super important to allow the coffee to bloom!

  • Once dripped, slowly top up your brewing chamber with hot water leaving space for the lid.

  • Pop the lid on and LET IT SLOWLY DRIP!
